Roasting Asparagus with Pine Nuts
Asparagus is abundant in immunity-enhancing antioxidants, while pine nuts offer heart-healthy monounsaturated fat. Roasting is among the easiest and tastiest ways for you to cook asparagus. Here we give it another flourish with a quick sauce of reduced balsamic vinegar plus a sprinkling of toasted pine nuts.

Preparation time: 20 minutes
Ingredients
2 tablespoons pine nuts
1-1/2 pounds asparagus
1 huge shallot, thinly sliced
2 teaspoons extra-virgin olive oil
1/4 teaspoon salt, divided
Fresh ground pepper to taste
1/4 cup balsamic vinegar
Preparation
1. Preheat range to 350° F. Spread pine nuts within a small baking pan and toast inside oven until golden and fragrant, about 7-10 minutes. Transfer to some small bowl to cool.
2. Increase oven temperature to 450° P oker. Snap off the tough stops of asparagus. Toss the asparagus using shallot, oil, 1/8 teaspoon salt and pepper. Spread in an individual layer on a large preparing your receipee sheet with sides. Roast, converting twice, until the asparagus is tender and browned, about 10-15 minutes.
3. Meanwhile, bring vinegar along with the remaining 1/8 teaspoon salt to some simmer in a small fry pan over medium-high heat. Reduce heat to medium-low and simmer, circulating the pan occasionally, until slightly syrupy and reduced to 1 tablespoon, about 5 minutes. For you to serve, toss the asparagus with the reduced vinegar and sprinkle with the pine nuts.
